Truly Guilt-Free Chocolate Chip Peanut Butter Cookies!

Don't knock it until you try it! These cookies are soft and delicious and guilt free! Loaded with fiber and protein the only thing to feel guilty about is not sharing them!


Ingredients: 

(8-10 cookies )


1 can of rinsed chickpeas (15oz)


3/4 cup of creamy peanut butter (I added about a full up. I love peanut butter)


1/3 cup pure maple syrup


1/4 cup oat flour


2 tsp vanilla extract


1 tsp baking powder


1/4 tsp sea salt


1/2 cup dark chocolate chips



Directions:


  1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper

  2. Place all ingredients but the chocolate chips into a food processor. Blend until smooth.

  3. Fold in the chocolate chips

  4. Roll dough into 8-10 even balls and place on cookie sheet

  5. Flatten balls in circular shape

  6. Bake for 12-14 minutes

  7. * optional: sprinkle with a little sea salt as soon as them come out of the oven
